Great Pickled Fish
 
Place Fish Fillets into a crock jar.
 
Step 1:
In a bowl combine
1 cup salt
2 quarts water (cold)
Stir till dissolved.
 
Pour over fish. Let this mixture sit for 24 hours.
 
Step 2:
 Drain off all liquid.
Cover fillets in crock with white vinegar
Let this mixture sit for 24 hours.
 
 
Step 3
Drain off all the vinegar
Place fillet of fish in crock alternating layers with slices of onions. Also Add a few slices of Lemon
 
Brine for Fish
5 cups sugar
5 cups white vinegar
6 TBsp pickling spice
 
Combine and cook above ingredients
Cool the brine and add 1¼ cups of White Vinegar
 
Pour brine over fish fillets
 These will be ready to eat in 24 hours.
 
ALWAYS KEEP REFRIGERATED
 
For thicker fillets slice them for more uniform slices.
